INGREDIENTS

  • 1 tablespoon olive oil 

  • 1 slice of turkey bacon

  • 1 lb lean ground sirloin

  • 1 red bell pepper, chopped

  • 1 large white onion, chopped

  • 4 garlic cloves, minced

  • 1/2 cup water

  • 3-5 red chili peppers (the more you add the spicer)

  • 1 bay leaf

  • 3 tablespoon chili powder

  • 3 tablespoon cocoa

  • 1 teaspoon salt

  • 1 teaspoon cumin

  • 1/2 teaspoon oregano

  • 1/4 teaspoon red pepper flakes

  • 1 beer - 12 oz (use your favorite - any kind will work except for sours and flavored)

  • 1 can 16 oz diced tomatoes

  • 2 cans - 16 oz beans (your choice kidney, pinto, or black)

INSTRUCTIONS

  • Heat the dutch oven to medium high heat, then add olive oil.

  • Add turkey bacon and cook for 1 minute. Then add beef cook for about 5 minutes. Then slide meat to one side and adding bell pepper, white onion and minced garlic. Saute for 10 minutes. After 5 minutes, add your desired amount of red chili peppers.

  • Every 2-3 minutes, stir meat and other mixture until browned bits begin to collect on the bottom of the dutch oven. 

  • Pour in water and deglaze the bottom releasing all the yummy brown bits.

  • Add the bay leaf and next six ingredients and stir until well combined.

  • Add beer and tomatoes. Simmer for 15 minutes. Occasionally stirring. Lower heat if boiling begins.

  • Remove red chili peppers and bay leaf.

  • Add beans and cook for 20 minutes. Stir every 5 minutes. Add more water or extra beer if needed.

Tip

+ If you do not like spicy foods, remove the red chili peppers and flakes from the recipe.
